The market here
Island properties in Samui, Krabi and Phuket tend to have a captive guest — limited walkable alternatives, especially in the evening — which makes capture much easier than in Bali and the failure to convert it more expensive. Bangkok properties face the opposite problem and compete against one of the best restaurant cities in the world.

Captive guests, uncaptured spend
On the islands, if guests are not eating with you they are frequently not eating well at all. That is a strong position and it is routinely wasted on a menu that has not changed in years and a pool with no service rotation.
Two menus fighting each other
Many properties run a Thai menu and an international menu with no structure connecting them. Guests default to the familiar, margin sits in the Thai dishes, and nobody guides the choice. This is one of the highest-value fixes in the market.
Beach service that stops mid-afternoon
Service that winds down at 4pm misses the highest-intent window of the day entirely. Guests then leave for a beach bar down the sand and spend the evening there.
Breakfast treated purely as cost
With breakfast included on most rates, properties optimise it for cost control and remove every reason to buy anything. Fresh juice, proper coffee and a short cooked-to-order list are consistently the fastest additions.
When to start
High season on the Andaman side runs November–April; the Gulf islands run offset, with Samui strongest December–February and July–August. Low season is the right time to do the structural work.
